Golden should be added to lukewarm milk and allowed to rest until the milk turns a rich saffron color.

Add the jaggery to the rice, reduce the heat, and simmer the rice gently until the jaggery has melted and added its deep, rich sweetness to the rice. When the rice is a beautiful light yellow color and the entire dish is delicately infused with the flavor and perfume of the saffron, add the milk that has been infused with saffron, increase the heat, and cook, stirring gently. Add the butter, give it one or two more stirs, and then serve it hot.
