Bread Butter Pickles

Pickles come in a wide variety of flavors and shapes, although the majority are sweet. Like any other pickle, bread & butter pickles can be consumed. These sweet side dishes, which go well with burgers, sandwiches, and traditional dishes, can even be fried. Ingredients

  • 2 1/2 pounds of pickling cucumbers, fresh from the market
  • 1 pound white or yellow onions, thinly sliced
  • 1/4 cup pickling salt
  • 1 1/4 cups white distilled vinegar
  • 1 cup apple cider vinegar
  • 2 1/4 cups sugar

Pickling spices:

  • 1/4 cup pickling salt (see recipe note)
  • 1 pound white or yellow onions, thinly sliced
  • 1 1/4 cups white distilled vinegar (5% acidity)
  • 1 cup apple cider vinegar (5% acidity)
  • 2 1/4 cups sugar
  • 1 tablespoon mustard seeds
  • 1 teaspoon crushed red pepper flakes
  • 3/4 teaspoon celery seeds
  • 1-inch cinnamon stick
  • 6 allspice berries plus a pinch of ground allspice
  • 6 whole cloves plus a pinch of ground cloves
  • 1/2 teaspoon ground turmeric
  • 2 1/2 pounds of pickling cucumbers, fresh from the market

How to Make Bread Butter Pickles

Step 1: Rinse and Toss the Cucumber and Onion

Wash the cucumber thoroughly and remove all the dirt on it. After washing and peeling, cut it into a round shape. Cut the onion in the same way and cut it into the long or round shape you want. Now add some salt to it, toss and let it remain like this for 1-2 hours. Cucumbers will release all the water by applying salt.

Step 2: Two Options (Whether one or Two)

It has two options included. It depends on you which one of these options you would like to do.

Keep the Slices in the Refrigerator

The first option is, after tossing, to wash it with a clean thin towel and keep ice on that cloth. Keep them in the fridge for 4-5 hours so that it gets solidified. Wash and sieve them after taking them out of the fridge.

Spread the Slices on tissue paper and let them dry

In the second option, spread cucumber and onion on tissue paper and keep it dry. Also, cover it with another tissue paper so that it does not get dirty.

In 3rd Step: Clean the Jars

If you do not want to store your pickles in the refrigerator, you will need to preheat your jars in hot water after canning. And, if you are planning to eat the pickle right away, or wants to keep your pickles in the refrigerator then you do not need to process them in the hot water. Also, if your jars are clean then you do not need to sterilize them. 

Step 4: Making of Syrup

In a pan add 1 ¼  cup diced vinegar, 1 cup apple cider vinegar, sugar 2 ¼  cups, 1 tbsp mustard seeds, 1 tbsp crushed red pepper flakes, ¾  celery seeds, 1-inch cinnamon stick, 6 allspice berries, 1 pinch ground allspice, 67 cloves, 1 pinch ground cloves, ½  tsp ground turmeric, add the ingredients and boil for 10 minutes. After 10 minutes, add cucumber and onion and boil it again. 

Step 5: Packing the Jars

Pack your jar with cucumbers and onions. Remember that while packing, leave a space of 1/2 inch from the top of the jar. Pack it well so that no dirt gets into it. Also, keep a dry and clean lid on the jar and pack it with a screw band. 

Your pickle is ready, you can keep it in the fridge. Let it develop for a few days before eating it, it will taste better. You can eat this bread butter pickle after 24 hours but for more taste, eat it after 1 week.

Some Tips While Storing the Bread Butter Pickles

  • If your bread butter picks are tightly sealed in a jar, you can store them outside in a cool place for up to 1 year. But if it is not well packed then store it in the fridge and use it within 3 months. There should be a popping sound while sealing the jar and if it is not coming then it means that your jar is not closed properly.
  • The fridge is the best storage location for these pickles. This will help them maintain their crunch better. Avoid freezing them. This will result in a soft texture.
  • If you are not doing the heating step of the jar, put it in the fridge and finish it as soon as possible as it may spoil.
  • Pickles can be canned, although doing so will result in small cooking and softening of the pickles’ texture. This is another disadvantage of keeping pickles at room temperature as compared to the refrigerator.
  • Will last more than a year at room temperature when treated properly. However, the texture gets softer over time when preserved in such a manner.
